MONTREAL, October 28, 2026. Mercuri Cuisine, the Canadian food manufacturer specializing in airline catering and logistics, as well as institutional and hospitality food service, today announced a partnership with Nurau Inc., named 2026 Industrial AI Company of the Year by McRock Capital. Mercuri will deploy Nurau's AI platform across its production floor to detect early signs of process deviation, help its team act on them faster and support the documentation of every corrective step, so that issues are addressed on the shop floor as they happen.
Built for quality from day one
When your customers include airlines, institutions and hospitality leaders, there is no such thing as a small mistake. Every client expects exceptional service and A-level product, every time.
Mercuri understood this early. From its first years in the business, the company put mechanisms in place to detect any type of deviation in its processes and mitigate it before it could affect quality. That discipline has fuelled its tremendous growth.
Growth brings new challenges. Rather than wait for them to show, Mercuri chose to get ahead of them.
How it works: two streams, one source of truth
Nurau strengthens the team's role in risk prevention by streamlining and optimizing key processes that Mercuri already performs, detecting leading indicators before they become incidents. Data flows in through two complementary streams:
- Active data collection. Mercuri team members digitize their operational routines and supervisory observations on iPads (or other electronic devices), taking notes as they go and adding photos when required. No paper forms, no re-typing at the end of the shift.
- Passive data collection. Mercuri's existing facility cameras are trained to focus on risk behaviours related to food safety and to health and safety, flagging them as they happen. The system focuses on processes and practices. It does not identify individuals.
Once a risk is captured, whether actively or passively, the platform lightens the administrative load. It surfaces each observation, routes it to the right people and tracks it through to closure, with suggested next steps drawn from operational intelligence built specifically for Mercuri from its SOPs and standards. Mercuri's team determines the action and verifies closure, while Nurau supports the documentation of findings and corrective measures. The result is a living record of how quality is protected, shift after shift, that supports audit readiness.
“At Mercuri Cuisine, excellence in quality and food safety is non-negotiable,” said Raffaele Mercuri, Founder and CEO of Mercuri Cuisine. “Our partnership with Nurau reinforces our commitment to innovation, allowing us to stay ahead of potential risks, strengthen our operations, and continue setting higher standards for our industry.”
“At Mercuri Cuisine, we don’t wait for problems; we stay ahead of them,” said Yashika Bhatia, Quality Assurance Manager at Mercuri Cuisine. “Nurau gives our quality control a sixth sense, helping us anticipate risks, turn insight into action, and continuously raise the bar for quality and food safety.”
“Mercuri is exactly the kind of operator we built Nurau for: a team that already treats quality as a culture, not a checkbox,” said Saba Saremi, Head of Global Operations at Nurau. “Mercuri is showing what a modern quality program looks like when prevention becomes the default. ”
